| 2-METHYL-3-TOLYLPROPIONALDEHYDE Usage And Synthesis |
Uses | 2-METHYL-3-TOLYLPROPIONALDEHYDE is used in flavor
compositions as a powerful additive to fruit
blends, particularly Raspberry, but also in
“tutti-frutti” and similar modem blends for
chewing gum and soft candy, or for desserts. The concentration used is normally mere
traces, from 0.05 to 1 ppm in the finished
product. | Preparation | From Tolyl aldehyde (orrho-metapara-mixture) by condensation with Propionaldehyde, followed by hydrogenation. |
